Matcha Almond Croissants are flaky, buttery pastries filled with rich almond cream and infused with earthy matcha flavor. These bakery-style treats are crisp on the outside, soft inside, and perfect for breakfast, brunch, or dessert.

Ingredients

  • 4 croissants
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup almond flour
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon matcha powder
  • 2 tablespoons milk
  • Sliced almonds for topping
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, cream together the butter and sugar until smooth.
  4. Add the egg, vanilla extract, milk, and matcha powder, mixing until fully combined.
  5. Stir in the almond flour to create a thick almond cream filling.
  6. Slice the croissants in half horizontally without cutting all the way through.
  7. Spread the matcha almond filling generously inside each croissant.
  8. Spread a little extra filling on top of the croissants.
  9. Sprinkle sliced almonds over the tops.
  10. Place the croissants on the prepared baking sheet.
  11. Bake for 12 to 15 minutes, or until golden and crisp.
  12. Allow the croissants to cool slightly before dusting with powdered sugar and serving.
