Ingredients

  • 1 pre-baked pie crust
  • 45 fresh tomatoes, sliced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh basil, chopped
  • 2 green onions, sliced
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 tsp garlic powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Arrange sliced tomatoes on paper towels, sprinkle with salt, and let sit for 10–15 minutes. Pat dry.
  3. Layer tomatoes in the pre-baked pie crust.
  4. Sprinkle with black pepper, basil, and green onions.
  5. Repeat layers if needed.
  6. In a bowl, mix mayonnaise, mozzarella, cheddar, and garlic powder.
  7. Spread cheese mixture evenly over the tomatoes.
  8. Bake for 30–35 minutes until golden and bubbly.
  9. Let cool for 10–15 minutes before slicing.
  10. Serve warm or at room temperature.

Notes

  • Drain tomatoes well to prevent a watery pie.
  • Use ripe but firm tomatoes for best texture.
  • Add cooked bacon or caramelized onions for variation.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat in the oven to maintain crust texture.
