Mashed cauliflower is a light and creamy alternative to traditional mashed potatoes, offering a smooth texture and mild flavor. This easy side dish is comforting, versatile, and perfect for a healthier meal.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons butter or olive oil
  • 2 cloves garlic, minced
  • 1/4 cup milk or cream
  • 1/4 cup grated parmesan cheese (optional)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the cauliflower florets and cook for 10 to 12 minutes until very tender.
  3. Drain the cauliflower well and let it sit for a few minutes to release excess moisture.
  4. In a small pan, sauté the garlic in butter or olive oil until fragrant.
  5. Transfer the cauliflower to a blender, food processor, or mash with a hand masher.
  6. Add the sautéed garlic, milk or cream, salt, and pepper.
  7. Blend or mash until smooth and creamy.
  8. Stir in parmesan cheese if using and adjust seasoning as needed.
  9. Serve warm.

  • Use roasted garlic for a deeper flavor variation.
  • Add cream cheese or cheddar for a richer version.
