Marinated olives with fresh herbs are a simple, elegant appetizer bursting with Mediterranean flavor. Briny olives are infused with garlic, herbs, and citrus for a rich and aromatic bite.

Ingredients

  • 2 cups mixed olives (green and black)
  • 1/3 cup olive oil
  • 3 garlic cloves, sliced
  • 1 tbsp fresh rosemary
  • 1 tbsp fresh thyme
  • 1 tsp lemon zest
  • 1/4 tsp red pepper flakes
  • 1/4 tsp black pepper
  • 1 tsp orange peel (optional)

Instructions

  1. Drain olives if needed and place in a bowl.
  2. In a small saucepan, gently heat olive oil over low heat.
  3. Add garlic, rosemary, thyme, lemon zest, red pepper flakes, black pepper, and orange peel if using.
  4. Warm for 2–3 minutes until fragrant, avoiding burning the garlic.
  5. Remove from heat and let cool slightly.
  6. Pour marinade over olives and toss to coat evenly.
  7. Cover and marinate for at least 1 hour or overnight.
  8. Bring to room temperature before serving.

  • Use high-quality olive oil for best flavor.
  • Rinse olives to reduce saltiness if needed.
  • Substitute dried herbs using smaller amounts.
