A vibrant Mediterranean appetizer combining briny olives, creamy feta, and aromatic herbs in a zesty marinade. Simple to prepare and packed with bold flavor.

Ingredients

  • 2 cups mixed olives (green and black), drained
  • 1 cup feta cheese, cubed or crumbled
  • 1/3 cup olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano or thyme
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons fresh herbs (parsley or basil), chopped
  • 1/4 teaspoon black pepper

Instructions

  1. Drain the olives and place them in a mixing bowl along with the feta cheese.
  2. In a separate bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, dried herbs, red pepper flakes, and black pepper.
  3. Pour the marinade over the olives and feta, then gently toss to coat without breaking the cheese.
  4. Cover and refrigerate for at least 1 hour, preferably several hours or overnight for deeper flavor.
  5. Before serving, bring to room temperature and sprinkle with fresh herbs.

Notes

  • Add sun-dried tomatoes or roasted peppers for extra flavor.
  • Swap feta with goat cheese for a creamier texture.
  • Rinse olives and feta lightly to reduce saltiness.
  • Store in an airtight container in the refrigerator for up to 4 days.
  • Serve with crusty bread, crackers, or as part of a charcuterie board.
