Marinated mushrooms are tender, flavorful bites soaked in a zesty herb-infused marinade. This versatile dish is perfect as an appetizer, side, or addition to antipasto platters.

Ingredients

  • 1 lb button mushrooms or cremini mushrooms
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar or white vinegar
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano or Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Clean the mushrooms and trim stems if needed.
  2. Bring a pot of salted water to a boil and cook the mushrooms for 4–5 minutes until just tender. Drain and let cool slightly.
  3. In a bowl, whisk together olive oil, vinegar, garlic, parsley, oregano, red pepper flakes, salt, pepper, and lemon juice.
  4. Add the warm mushrooms to the marinade and toss to coat evenly.
  5. Transfer to a container, cover, and refrigerate for at least 2 hours or overnight for best flavor.
  6. Stir before serving and adjust seasoning if needed.

Notes

  • For deeper flavor, marinate overnight.
  • Use balsamic vinegar for a slightly sweeter variation.
  • Add fresh thyme or rosemary for extra aroma.
  • Sauté mushrooms instead of boiling for a richer taste.
  • Store in the refrigerator for up to 5 days and serve cold or at room temperature.
