Ingredients
1 lb button mushrooms or cremini mushrooms
1/4 cup olive oil
3 tablespoons red wine vinegar or white vinegar
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 teaspoon dried oregano or Italian seasoning
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
1 tablespoon lemon juice
Instructions
Clean the mushrooms and trim stems if needed.
Bring a pot of salted water to a boil and cook the mushrooms for 4–5 minutes until just tender. Drain and let cool slightly.
In a bowl, whisk together olive oil, vinegar, garlic, parsley, oregano, red pepper flakes, salt, pepper, and lemon juice.
Add the warm mushrooms to the marinade and toss to coat evenly.
Transfer to a container, cover, and refrigerate for at least 2 hours or overnight for best flavor.
Stir before serving and adjust seasoning if needed.
Notes
For deeper flavor, marinate overnight.
Use balsamic vinegar for a slightly sweeter variation.
Add fresh thyme or rosemary for extra aroma.
Sauté mushrooms instead of boiling for a richer taste.
