Marinated mozzarella balls are a fresh and flavorful appetizer featuring creamy mozzarella coated with extra-virgin olive oil, garlic, herbs, and seasonings. Prepare them ahead and serve with antipasto, crusty bread, salads, or appetizer skewers.

Ingredients

  • 16 ounces fresh mozzarella balls, drained
  • 1/2 cup extra-virgin olive oil
  • 2 tablespoons fresh basil, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt, or to taste
  • 1 teaspoon fresh lemon zest, optional
  • 1 tablespoon balsamic vinegar, optional for serving

Instructions

  1. Drain the fresh mozzarella balls thoroughly and gently pat them dry with paper towels to remove excess moisture.
  2. Place the mozzarella balls in a medium bowl or clean glass container.
  3. In a separate small bowl, combine the extra-virgin olive oil, chopped basil, parsley, minced garlic, dried oregano, crushed red pepper flakes, black pepper, and salt.
  4. Add the optional fresh lemon zest for a brighter citrus flavor.
  5. Pour the seasoned olive oil over the mozzarella balls and gently toss until every piece is evenly coated.
  6. Cover the container and refrigerate for at least 1 hour, or several hours for a more developed flavor.
  7. Gently stir or turn the mozzarella occasionally while marinating to redistribute the herbs and seasonings.
  8. Before serving, remove the mozzarella from the refrigerator and let it sit briefly at room temperature so the olive oil can become fluid again.
  9. Gently toss once more and finish with additional fresh basil, black pepper, or a light drizzle of balsamic vinegar if desired.
  10. Serve as an appetizer or add the marinated mozzarella to salads, antipasto platters, or appetizer skewers.

Notes

  • Bocconcini or smaller ciliegine fresh mozzarella balls both work well for this recipe.
  • Patting the mozzarella dry before marinating helps the seasoned olive oil coat the cheese more effectively.
  • For a spicier version, increase the crushed red pepper flakes or add finely chopped fresh chili.
  • Rosemary, thyme, or additional oregano can be added for a more herb-forward variation.
  • For additional citrus flavor, add lemon zest and a small squeeze of fresh lemon juice.
  • Chopped sun-dried tomatoes, olives, or roasted red peppers make flavorful Mediterranean-inspired additions.
  • For appetizer skewers, thread the marinated mozzarella onto skewers with cherry tomatoes, basil leaves, olives, or salami.
  • Store in a tightly sealed container in the refrigerator and enjoy within 3–4 days.
  • Extra-virgin olive oil may become cloudy or partially solid in the refrigerator. Let the mozzarella sit briefly at room temperature before serving so the oil becomes fluid again.
  • Freezing is not recommended because it can negatively affect the delicate texture of fresh mozzarella.
