Marinated Mozzarella Balls are a simple Italian-inspired appetizer made with fresh mozzarella, olive oil, garlic, and aromatic herbs. They become even more flavorful as they marinate, making them perfect for charcuterie boards, antipasto platters, or easy entertaining.

Ingredients

  • 16 ounces fresh mozzarella balls (bocconcini or ciliegine), drained
  • 1/2 cup extra virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Drain the mozzarella balls and gently pat them dry with paper towels.
  2. Place the mozzarella in a large bowl or clean glass jar.
  3. Add the olive oil, garlic, basil, parsley, oregano, thyme, crushed red pepper flakes, salt, black pepper, and lemon zest.
  4. Gently stir or shake until the mozzarella is evenly coated.
  5. Cover and refrigerate for at least 2 hours, or overnight for the best flavor.
  6. Remove from the refrigerator about 20 minutes before serving so the olive oil returns to a liquid consistency.
  7. Gently stir once more before serving.

  • Add sun-dried tomatoes for a sweet and tangy variation.
  • Include sliced olives for a Mediterranean-inspired twist.
  • Use fresh rosemary or thyme instead of parsley for a different herb profile.
  • Add a splash of balsamic vinegar for extra depth.
  • Include whole peppercorns and lemon slices for additional flavor and presentation.
  • Store in an airtight container in the refrigerator for up to 5 days. Let sit at room temperature for 20 to 30 minutes before serving if the olive oil has solidified.
