Ingredients

  • 2 pints cherry tomatoes, halved
  • 8 ounces burrata cheese
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh oregano or 1/2 teaspoon dried oregano
  • 1 teaspoon lemon zest
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon balsamic glaze (optional)
  • Toasted baguette slices or crostini, for serving

Instructions

  1. In a large bowl, combine the olive oil, balsamic vinegar, garlic, basil, parsley, oregano, lemon zest, salt, and black pepper.
  2. Add the halved cherry tomatoes and gently toss until evenly coated.
  3. Cover and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to develop.
  4. Transfer the marinated tomatoes to a serving platter, spooning some of the marinade over the top.
  5. Place the burrata in the center of the platter.
  6. Drizzle with balsamic glaze if desired.
  7. Garnish with additional fresh basil and freshly cracked black pepper.
  8. Serve immediately with toasted baguette slices or crostini.
