  • 1 egg yolk
  • 2 tablespoons cold water
  • 8 oz cream cheese or mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh mango puree
  • 1 tablespoon lemon or lime juice
  • 2 fresh ripe mangoes, thinly sliced

  • 1 tablespoon water

Instructions

  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add the egg yolk and cold water, mixing until a dough forms.

  5. Preheat the oven to 375°F (190°C).
  6. Roll out the dough and press it into a 9-inch tart pan.
  7. Prick the bottom with a fork, line with parchment paper, and fill with pie weights.
  8. Blind bake for 15 minutes, remove the weights, and bake for an additional 10 to 12 minutes until golden brown. Cool completely.
  9. Beat the cream cheese or mascarpone until smooth.
  10. Add the powdered sugar, vanilla extract, mango puree, and citrus juice, mixing until fully combined.

  14. Arrange the mango slices decoratively over the filling.
  15. Mix the warmed jam with water and brush over the mango slices for a glossy finish.
  16. Refrigerate for at least 1 hour before serving.
