Mango Sago is a refreshing Asian dessert made with ripe mangoes, chewy sago pearls, and a creamy coconut milk mixture. Light, tropical, and perfectly chilled, it is an ideal treat for warm days and special gatherings.

Ingredients

  • 3 ripe mangoes, peeled and diced
  • 1/2 cup small sago pearls
  • 1 cup coconut milk
  • 1/2 cup evaporated milk
  • 1/4 cup granulated sugar or sweetened condensed milk
  • 6 cups water
  • 1 cup fresh mango cubes for garnish

Instructions

  1. Bring a large pot of water to a boil.
  2. Add the sago pearls and cook, stirring occasionally, until mostly translucent, about 15 to 20 minutes.
  3. Turn off the heat, cover the pot, and let the sago rest until fully transparent.
  4. Drain the cooked sago and rinse under cold water to remove excess starch. Set aside.
  5. Reserve some diced mango for garnish.
  6. Blend the remaining mangoes with the coconut milk, evaporated milk, and sugar or condensed milk until smooth.
  7. Transfer the mango mixture to a large bowl.
  8. Stir in the cooked sago pearls and mix well.
  9. Refrigerate for at least 1 hour until thoroughly chilled.
  10. Serve in individual bowls or glasses and top with the reserved mango cubes.

Notes

  • Add pomelo segments for a traditional mango pomelo sago variation.
  • Use coconut cream instead of coconut milk for a richer dessert.
  • Passion fruit pulp adds a bright tropical flavor.
  • Store in an airtight container in the refrigerator for up to 2 days.
  • Stir before serving, as the sago may settle during storage.
  • Do not freeze, as the texture of the sago and mango may deteriorate.
