Mango Pudding is a light, creamy dessert bursting with the natural sweetness of ripe mangoes and a silky-smooth texture. This refreshing make-ahead treat is perfect for warm days, dinner parties, or an elegant everyday dessert.

Ingredients

  • 2 large ripe mangoes, peeled and diced
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar
  • 2 1/4 teaspoons unflavored gelatin
  • 3 tablespoons cold water
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Fresh mango cubes (optional)
  • Whipped cream (optional)
  • Mint leaves (optional)
  • Toasted coconut flakes (optional)
  • Lime zest (optional)

Instructions

  1. Sprinkle the gelatin over the cold water and let it bloom for 5 minutes.
  2. Blend the diced mangoes until completely smooth.
  3. In a saucepan, gently heat the milk, heavy cream, sugar, and salt until the sugar dissolves without boiling.
  4. Stir the bloomed gelatin into the warm milk mixture until fully dissolved.
  5. Mix the mango puree into the milk mixture and stir in the vanilla extract until smooth.
  6. Pour the mixture evenly into serving glasses or ramekins.
  7. Refrigerate for at least 4 hours, or until fully set.
  8. Garnish with fresh mango cubes, whipped cream, toasted coconut, mint leaves, or lime zest before serving if desired.

Notes

  • Use ripe, sweet mangoes for the best flavor and texture.
  • Frozen mangoes can be used if thawed and well drained.
  • For a dairy-free version, substitute the milk and cream with full-fat coconut milk.
  • Store covered in the refrigerator for up to 4 days.
  • Do not freeze, as the texture may become grainy after thawing.
