This Mango Pie is a creamy, refreshing dessert with a buttery graham cracker crust and a luscious mango filling bursting with tropical flavor. It’s an easy make-ahead treat that’s perfect for warm-weather gatherings and special occasions.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 2 cups ripe mango puree
  • 8 ounces cream cheese, softened
  • 1 (14-ounce) can sweetened condensed milk
  • 1/4 cup fresh lemon or lime juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon unflavored gelatin, dissolved according to package directions (optional, for a firmer pie)
  • Fresh mango slices, for garnish
  • Whipped cream, for garnish
  • Fresh mint leaves, optional, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
  4. Bake the crust for 8 to 10 minutes, then let it cool completely.
  5. Beat the softened cream cheese until smooth.
  6. Mix in the sweetened condensed milk, mango puree, lemon or lime juice, and vanilla extract until creamy.
  7. Stir in the prepared gelatin if using.
  8. Pour the filling into the cooled crust and smooth the top with a spatula.
  9. Refrigerate for at least 4 hours, or until the pie is fully set.
  10. Garnish with whipped cream, fresh mango slices, and mint leaves before serving.

Notes

  • Use a vanilla wafer crust instead of graham crackers for a sweeter variation.
  • Add toasted or shredded coconut to enhance the tropical flavor.
  • Substitute mascarpone cheese for cream cheese for an even creamier filling.
  • Store covered in the refrigerator for up to 4 days or freeze for up to 2 months. Thaw overnight in the refrigerator before serving.
  • Serve chilled with whipped cream, toasted coconut, fresh berries, or vanilla ice cream.
