Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 3 packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 tablespoon mandarin orange zest
  • 1 can mandarin oranges, drained
  • 1/2 cup orange marmalade
  • Whipped cream, optional

Instructions

  1. Preheat the oven to 325°F.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar.
  3. Press the crust mixture firmly into the bottom of a springform pan.
  4. Bake the crust for 10 minutes, then let it cool slightly.
  5. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  6. Add the eggs one at a time, mixing after each addition.
  7. Mix in vanilla extract, sour cream, and mandarin orange zest.
  8. Pour the filling over the prepared crust and smooth the top.
  9. Bake for 50–60 minutes until the center is slightly set.
  10. Turn off the oven and let the cheesecake cool gradually with the oven door slightly open.
  11. Refrigerate the cheesecake for at least 4 hours or overnight.
  12. Before serving, arrange the mandarin oranges on top.
  13. Warm the orange marmalade slightly and brush it over the oranges for a glossy finish.
  14. Serve chilled with whipped cream if desired.
