Make Ahead Breakfast Tacos are a convenient and flavorful breakfast filled with scrambled eggs, savory meat, cheese, and vegetables wrapped in soft tortillas. Perfect for meal prep, these tacos are freezer-friendly and easy to reheat for busy mornings.

Ingredients

  • 8 flour or corn tortillas
  • 8 eggs
  • 1/2 pound breakfast sausage or 6 slices bacon
  • 1 cup shredded cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 tablespoon butter or cooking oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup salsa
  • 1 avocado, sliced (optional)
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Cook the sausage or bacon in a skillet over medium heat until fully cooked, then set aside.
  2. In the same skillet, sauté the onions and bell peppers until softened.
  3. Whisk the eggs with salt and black pepper in a bowl.
  4. Heat butter or oil in a skillet and cook the eggs over medium heat, stirring gently until scrambled and fully cooked.
  5. Warm the tortillas slightly to make them easier to fold.
  6. Assemble the tacos by filling each tortilla with scrambled eggs, cooked meat, sautéed vegetables, and shredded cheese.
  7. Allow the tacos to cool completely before storing.
  8. Wrap each taco individually in foil or plastic wrap.
  9. Store in the refrigerator for up to 4 days or freeze for up to 2 months.
  10. Reheat in the microwave, oven, or air fryer before serving with salsa, avocado, or cilantro if desired.
