Maine Lobster Rolls are a New England classic featuring sweet lobster meat lightly dressed with mayonnaise and served in buttery toasted split-top buns. Simple, fresh, and elegant, they showcase the natural flavor of lobster in every bite.

Ingredients

  • 1 pound cooked lobster meat, chopped into bite-sized pieces
  • ¼ cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon finely chopped celery
  • 1 tablespoon chopped fresh chives
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 New England-style split-top hot dog buns
  • 2 tablespoons unsalted butter, melted
  • Lettuce leaves (optional)

Instructions

  1. In a medium bowl, combine the lobster meat, mayonnaise, lemon juice, celery, chives, salt, and black pepper.
  2. Gently toss until the lobster is lightly coated.
  3. Cover and refrigerate while preparing the buns.
  4. Heat a skillet or griddle over medium heat.
  5. Brush the outsides of the split-top buns with melted butter.
  6. Toast the buns for 1–2 minutes per side until golden brown.
  7. Place a lettuce leaf inside each bun if desired.
  8. Divide the lobster mixture evenly among the toasted buns.
  9. Serve immediately with lemon wedges if desired.

Notes

  • A combination of claw, knuckle, and tail meat provides excellent flavor and texture.
  • For a more traditional version, omit the celery and let the lobster shine.
  • The filling can be prepared several hours ahead and refrigerated.
  • Store leftover lobster filling in the refrigerator for up to 2 days.
  • For a Connecticut-style variation, serve warm lobster tossed with melted butter.
  • Serve with potato chips, coleslaw, fries, corn on the cob, or pickles.
