Lovage Soup

A light and aromatic lovage soup with a creamy texture and a fresh, celery-like flavor. This simple dish is comforting, nourishing, and perfect for herb lovers.

Ingredients

  • fresh lovage leaves
  • potatoes
  • onion
  • garlic
  • vegetable or chicken stock
  • butter or olive oil
  • cream (optional)
  • salt
  • black pepper

Instructions

  1. Wash and roughly chop lovage leaves, then peel and dice potatoes.
  2. Heat butter or olive oil in a pot and cook chopped onion until soft.
  3. Add minced garlic and cook briefly until fragrant.
  4. Add diced potatoes and pour in stock, then bring to a boil.
  5. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
  6. Add lovage leaves and cook for another 3–5 minutes.
  7. Blend the soup until smooth using an immersion blender or standard blender.
  8. Return to the pot, stir in cream if using, and season with salt and pepper.
  9. Heat gently and serve warm.

  • Add leeks or carrots for extra flavor variation.
  • Include cooked chicken or white beans for added protein.
  • Add a squeeze of lemon juice to brighten the flavor.
  • Use plant-based cream for a vegan option.
