These Loaded Baked Potato Bites are crispy, cheesy, and topped with smoky bacon, fresh green onions, and cool sour cream. They’re a crowd-pleasing appetizer that’s perfect for parties, game days, or anytime you’re craving a loaded baked potato in bite-sized form.

Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 2 green onions, thinly sliced
  • 1/2 cup sour cream
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the potatoes thoroughly and slice them into 1/4-inch thick rounds.
  3. Toss the potato slices with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  4. Arrange the slices in a single layer on the prepared baking sheet.
  5. Bake for 20 minutes, then flip the potato slices and continue baking for another 15–20 minutes until golden brown and tender.
  6. Remove the baking sheet from the oven and top each potato round with shredded cheddar cheese and crumbled bacon.
  7. Return to the oven for 3–5 minutes, or until the cheese is melted.
  8. Top each potato bite with a dollop of sour cream, sliced green onions, and chopped parsley if desired before serving.

Notes

  • Substitute Monterey Jack, pepper jack, or mozzarella cheese for a different flavor.
  • Use turkey bacon for a lighter option or omit the bacon and add sautéed mushrooms or roasted peppers for a vegetarian version.
  • Add diced jalapeños for extra heat or top with pulled pork or shredded barbecue chicken for a heartier appetizer.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat in a 375°F oven or air fryer for 5–7 minutes and add the sour cream and green onions after reheating.
