24 ladyfinger biscuits
1/2 cup limoncello liqueur
1/4 cup fresh lemon juice
2 tablespoons water
2 tablespoons lemon zest, divided
16 oz mascarpone cheese
1 cup heavy whipping cream
2 tablespoons granulated sugar
1/2 cup powdered sugar
1 teaspoon vanilla extract
Fresh lemon slices or additional zest for garnish
Instructions
In a shallow bowl, combine the limoncello, lemon juice, water, and granulated sugar to create the soaking mixture.
In a large mixing bowl, beat the mascarpone cheese until smooth.
In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
Gently fold the whipped cream into the mascarpone until fully combined.
Quickly dip each ladyfinger into the lemon soaking mixture without oversaturating.
Arrange a layer of soaked ladyfingers in the bottom of a serving dish.
Spread half of the mascarpone mixture evenly over the ladyfingers.
Sprinkle with half of the lemon zest.
Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
Smooth the top and sprinkle with the remaining lemon zest.
Cover and refrigerate for at least 4 hours or overnight.
Garnish with fresh lemon slices or additional zest before serving.
