Lentil Bolognese is a hearty, plant-based twist on classic Italian pasta sauce made with tender lentils, tomatoes, and aromatic vegetables. It’s a comforting, protein-rich meal that’s perfect for weeknight dinners or meal prep.

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 carrots, finely diced
  • 2 celery stalks, finely diced
  • 3 cloves garlic, minced
  • 1 cup dried brown or green lentils, rinsed
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 3 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 1 tablespoon balsamic vinegar
  • Fresh parsley or basil, chopped, for garnish
  • Grated Parmesan or vegan Parmesan, for serving (optional)
  • Cooked pasta of choice

Instructions

  1. Heat the olive oil in a large skillet or saucepan over medium heat.
  2. Cook the onion, carrots, and celery for 6 to 8 minutes until softened.
  3. Stir in the garlic and tomato paste and cook for 1 minute until fragrant.
  4. Add the lentils, crushed tomatoes, vegetable broth, oregano, basil, thyme, bay leaf, salt, and black pepper.
  5. Bring the mixture to a gentle boil, then reduce the heat and simmer.
  6. Cook for 35 to 45 minutes, stirring occasionally, until the lentils are tender and the sauce has thickened.
  7. Remove the bay leaf and stir in the balsamic vinegar.
  8. Taste and adjust the seasoning as needed.
  9. Serve the Lentil Bolognese over cooked pasta and garnish with fresh herbs and grated Parmesan or vegan Parmesan if desired.

  • Add finely chopped mushrooms for a heartier texture.
  • Stir in spinach or kale during the last few minutes of cooking.
  • Use red lentils for a softer, creamier sauce.
  • Add crushed red pepper flakes for a spicy kick.
