Lemony Marinated Mozzarella Balls are a fresh and flavorful no-cook appetizer featuring creamy mozzarella pearls soaked in a bright lemon and herb marinade. Perfect for entertaining, charcuterie boards, salads, or snacking, these easy mozzarella bites are refreshing, elegant, and packed with flavor.

Ingredients

  • 16 oz fresh mozzarella balls or mozzarella pearls
  • 1/2 cup olive oil
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 2 garlic cloves, minced
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh basil
  • 1/2 tsp red pepper flakes
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Drain the mozzarella balls and pat them dry gently with paper towels.
  2. In a medium bowl or jar, combine olive oil, lemon zest, lemon juice, minced garlic, parsley, basil, red pepper flakes, Italian seasoning, salt, and black pepper.
  3. Stir the marinade until well combined.
  4. Add the mozzarella balls to the marinade and toss gently to coat evenly.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
  6. Stir occasionally while marinating for even flavor distribution.
  7. Before serving, allow the mozzarella to sit at room temperature for about 10–15 minutes for the best texture and flavor.
  8. Serve with toothpicks, crackers, crostini, or alongside a charcuterie board.

Notes

  • Fresh mozzarella pearls work best, but larger mozzarella balls can be cut into bite-sized pieces.
  • Fresh herbs provide the brightest flavor, though dried herbs may also be used.
  • Add sun-dried tomatoes, olives, or roasted red peppers for extra Mediterranean flavor.
