Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder

  • 2 tablespoons poppy seeds
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/3 cup vegetable oil or melted butter
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line or lightly grease a 12-cup muffin pan.
  2. Whisk together the flour, baking powder, baking soda, salt, and poppy seeds in a large bowl.
  3. In another bowl, whisk together the sugar, eggs, milk, sour cream, vegetable oil or melted butter, vanilla extract, fresh lemon juice, and lemon zest until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
  6. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack.
  8. If desired, whisk together the lemon glaze ingredients and drizzle over the cooled muffins before serving.
