Ingredients

  1. 2 boneless, skinless chicken breasts or thighs
  2. 1 lemon (zest and juice)
  3. 3 cloves garlic, minced
  4. 3 tbsp butter, divided
  5. 1 tbsp olive oil
  6. 1/2 cup chicken broth
  7. 3/4 cup heavy cream or half-and-half
  8. 3/4 cup grated Parmesan cheese
  9. 8 oz pasta (fettuccine, linguine, or penne)
  10. 1 tsp Italian seasoning or dried thyme
  11. Salt and black pepper, to taste
  12. Fresh parsley, chopped (for garnish)
  13. Optional: crushed red pepper flakes, to taste

Instructions

Cook the pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.

  1. Season chicken with salt, pepper, lemon zest, and Italian seasoning.
  2. In a large skillet, heat olive oil and 1 1/2 tbsp butter over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt remaining butter. Add garlic and sauté for 1–2 minutes until fragrant.
  4. Stir in chicken broth and lemon juice. Simmer for 2–3 minutes to reduce slightly.
  5. Add cream and Parmesan, stirring until cheese melts and sauce becomes creamy.
  6. Add cooked pasta and toss to coat, using reserved pasta water to loosen if needed.
  7. Return chicken to skillet and simmer everything together for 2–3 minutes.
  8. Garnish with fresh parsley and additional Parmesan before serving.

Notes

  1. To make dairy-free, use vegan butter, cream, and Parmesan alternatives.
  2. Add spinach, peas, or asparagus for extra color and nutrition.
  3. Double the sauce if you prefer extra creaminess or are using more pasta.
