Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 can (15 ounces) white beans, drained and rinsed
  • ¾ cup crumbled feta cheese
  • ¼ cup red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the green beans and cook for 3 to 4 minutes until crisp-tender.
  3. Immediately transfer the green beans to a bowl of ice water to stop the cooking process.
  4. Drain and pat the green beans dry.
  5. In a large mixing bowl, combine the green beans, white beans, red onion, parsley, and dill if using.
  6. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, salt, and pepper.
  7. Pour the dressing over the salad and toss gently to coat.
  8. Fold in the crumbled feta cheese.
