Ingredients

  • Fresh lemons, zested and juiced
  • Granulated sugar
  • Eggs
  • Egg yolks
  • Unsalted butter
  • Pinch of salt

Instructions

  1. Whisk together the eggs, egg yolks, granulated sugar, lemon zest, lemon juice, and a pinch of salt in a heatproof bowl or saucepan.
  2. Cook the mixture over low heat or in a double boiler, stirring constantly until it begins to thicken.
  3. Continue stirring until the curd is thick enough to coat the back of a spoon.
