Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 12-cup muffin pan with cupcake liners.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large bowl, cream the butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time.
  6. Mix in the lemon zest, lemon juice, and vanilla extract.
  7. Add the dry ingredients alternately with the milk, mixing until just combined.
  8. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  9. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.

  11. For the frosting, beat the butter until smooth and creamy.
  12. Gradually add the powdered sugar and mix until incorporated.
  13. Blend in the raspberry puree or jam and vanilla extract until light and fluffy.
