Lemon cookies are soft, buttery treats with a bright citrus flavor and tender texture. Perfect for spring gatherings, afternoon snacks, or whenever you’re craving a refreshing homemade cookie.

Ingredients

  • All-purpose flour
  • Baking powder
  • Baking soda
  • Salt
  • Unsalted butter
  • Granulated sugar
  • Egg
  • Fresh lemon juice
  • Lemon zest
  • Vanilla extract
  • Powdered sugar (optional glaze)
  • Fresh lemon juice (optional glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Mix in the egg, lemon juice, lemon zest, and vanilla extract until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, leaving space between each cookie.
  7. Bake for 10 to 12 minutes or until the edges are lightly golden and the centers are set.
  8. Allow the cookies to cool on the baking sheet for several minutes before transferring to a wire rack.
  9. If using the glaze, whisk together the powdered sugar and lemon juice and drizzle over the cooled cookies.
