Soft, chewy cookies made with lemon cake mix and bursting with bright citrus flavor. These easy treats come together quickly and offer a refreshing, sweet bite with a hint of tang.

Ingredients

  • 1 box lemon cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup powdered sugar (for rolling)
  • 1 tablespoon lemon zest (optional)

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the lemon cake mix, eggs, and vegetable oil.
  3. Mix until a soft dough forms.
  4. Stir in lemon zest if using.
  5. Scoop small portions of dough and roll into balls.
  6. Roll each dough ball in powdered sugar until fully coated.
  7. Place on the prepared baking sheet, spacing them apart.
  8. Bake for 10–12 minutes until edges are set and tops are slightly cracked.
  9. Let cookies cool on the baking sheet for a few minutes, then transfer to a wire rack.
