Soft, chewy lemon brownies with a rich buttery texture and a bright citrus flavor, topped with a tangy lemon glaze. A refreshing twist on classic dessert bars.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)
  • 1 teaspoon lemon zest (for glaze)

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking pan with parchment paper.
  2. In a bowl, whisk melted butter and sugar until smooth.
  3. Add eggs, lemon zest, lemon juice, and vanilla extract, mixing well.
  4. Stir in flour and salt until a thick batter forms.
  5. Spread batter evenly into the prepared pan.
  6. Bake for 20–25 minutes until edges are lightly golden and center is set.
  7. Allow to cool completely in the pan.
  8. In a small bowl, mix powdered sugar, lemon juice, and zest to form a glaze.
  9. Spread glaze over cooled brownies.
  10. Let glaze set, then slice into squares and serve.

Notes

  • Add white chocolate chips for extra sweetness.
  • Increase lemon zest for a stronger citrus flavor.
  • Use fresh lemon juice for best results.
  • Store at room temperature for up to 3 days or refrigerate for up to 5 days.
