Lemon and Thyme Roast Chicken and Potatoes with Salsa Verde

Lemon and thyme roast chicken with golden potatoes is a comforting one-pan meal finished with a vibrant homemade salsa verde. Fresh herbs, capers, garlic, and citrus give the sauce a bright flavor that balances the rich roasted chicken and crispy potatoes.

Ingredients

  • Whole chicken
  • Potatoes, cut into roasting-size pieces
  • Fresh lemons
  • Fresh thyme
  • Garlic cloves
  • Olive oil
  • Unsalted butter, softened
  • Salt
  • Freshly ground black pepper
  • Fresh flat-leaf parsley
  • Fresh basil
  • Fresh mint
  • Capers, drained
  • Garlic, for the salsa verde
  • Dijon mustard
  • Red wine vinegar or fresh lemon juice
  • Extra-virgin olive oil
  • Salt, for the salsa verde
  • Freshly ground black pepper, for the salsa verde

Instructions

  1. Preheat the oven to 425°F (220°C). Pat the chicken thoroughly dry with paper towels.
  2. Combine the softened butter with fresh thyme leaves, finely grated lemon zest, salt, and black pepper. Rub the mixture over the chicken, working some underneath the skin where possible.
  3. Place lemon halves, garlic cloves, and a few fresh thyme sprigs inside the chicken cavity, then place the chicken in a large roasting pan.
  4. Toss the potatoes with olive oil, salt, black pepper, garlic, and additional thyme. Arrange them around the chicken with enough space between the pieces to encourage browning.
  5. Roast for approximately 1 hour 15 minutes to 1 hour 30 minutes, until the chicken skin is deeply golden, the potatoes are tender and crisp, and the thickest part of the chicken reaches at least 165°F (74°C).
  6. If the chicken is cooked before the potatoes are sufficiently browned, transfer the chicken to a board to rest and return the potatoes to the oven for another 10–15 minutes.
  7. While the chicken rests, finely chop the parsley, basil, mint, capers, and garlic for the salsa verde.
  8. Combine the chopped herbs, capers, and garlic with Dijon mustard and red wine vinegar or lemon juice. Gradually stir in enough extra-virgin olive oil to make a loose, spoonable sauce, then season with salt and black pepper.
  9. Rest the chicken for about 15 minutes before carving.
  10. Serve the carved chicken with the crispy roasted potatoes and generously spoon the fresh salsa verde over the chicken just before serving.

Notes

  • Use a meat thermometer to ensure the thickest part of the chicken reaches at least 165°F (74°C) without unnecessarily overcooking it.
  • Giving the potatoes plenty of space in the roasting pan helps them become crisp rather than steam.
  • Bone-in chicken thighs or drumsticks can replace the whole chicken for a faster variation; adjust the roasting time and cook to a safe internal temperature.
  • Carrots, red onions, fennel, or parsnips can be roasted alongside the potatoes.
  • Rosemary or oregano can replace some of the thyme for a different herbal flavor.
  • The salsa verde herbs can be varied with dill or cilantro, while parsley makes a versatile base.
  • Finely chopped anchovy fillets can be added to the salsa verde for extra savory depth.
  • Store leftover chicken and potatoes separately in airtight containers in the refrigerator for up to 3–4 days, keeping the salsa verde in a separate container.
  • Reheat the chicken and potatoes in a 350°F (175°C) oven until the chicken reaches 165°F (74°C). Serve the salsa verde at room temperature rather than heating it.
  • Leftover chicken can be served cold in sandwiches or salads with additional salsa verde.
