Leftover Turkey Tacos are a quick and flavorful way to transform turkey into a vibrant meal with seasoned meat, fresh toppings, and warm tortillas.

Ingredients

  • 2 cups cooked turkey, shredded or chopped
  • 810 tortillas (corn or flour)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons taco seasoning or spices (cumin, paprika, chili powder)
  • 1 cup tomato, diced
  • 1 cup lettuce, shredded
  • 1/2 cup cheese, shredded (optional)
  • 1/2 cup sour cream or yogurt
  • 1 lime, cut into wedges
  • 2 tablespoons fresh cilantro (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and cook until softened, then add garlic and cook briefly.
  2. Add cooked turkey and taco seasoning. Stir well and cook until heated through, adding a splash of water or broth if needed.
  3. Warm tortillas in a pan or over a flame until soft.
  4. Assemble tacos by adding turkey to each tortilla.
  5. Top with diced tomatoes, shredded lettuce, cheese, and sour cream or yogurt.
  6. Finish with lime juice and cilantro if desired.
  7. Serve immediately while warm.
