Leftover Turkey Stew is a hearty and comforting dish with tender turkey, wholesome vegetables, and a rich, flavorful broth perfect for cozy meals.

Ingredients

  • 2 cups cooked turkey, cubed or shredded
  • 2 cups potatoes, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or turkey broth
  • 1 tablespoon tomato paste (optional)
  • 2 tablespoons olive oil or butter
  • 2 tablespoons flour (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme or rosemary (optional)
  • 1 bay leaf (optional)

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Add onion, carrots, and celery, and cook until softened.
  2. Stir in garlic and cook briefly until fragrant.
  3. Add diced potatoes and mix well with the vegetables.
  4. Pour in broth and add tomato paste and bay leaf if using. Bring to a gentle boil.
  5. Reduce heat and simmer for 20–25 minutes until potatoes are tender.
  6. Add cooked turkey and simmer for another 10 minutes until heated through.
  7. If desired, mix flour with water and stir into the stew to thicken. Cook until thickened.
  8. Season with salt, pepper, and herbs to taste.
  9. Remove bay leaf and serve hot.
