  • 6 cups chicken or turkey broth

  • 2 cloves garlic, minced
  • 2 tablespoons butter or olive oil
  • 2 tablespoons flour (optional)
  • 1/4 cup milk or broth (if needed for dumplings)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme or parsley (optional)

Instructions

  1. Heat butter or olive oil in a large pot over medium heat. Add onion, carrots, and celery, and cook until softened.
