A quick and flavorful way to reinvent leftover roast goose, these wraps combine tender meat with fresh vegetables and a light sauce in soft flatbread.

Ingredients

  • 2 cups leftover roast goose, shredded or sliced
  • 4 flatbreads or tortillas
  • 1 cup lettuce, shredded
  • 1/2 cucumber, sliced
  • 1 cup tomatoes, chopped
  • 1/4 red onion, thinly sliced
  • 1/3 cup mayonnaise or yogurt
  • 1 tablespoon mustard or hoisin sauce (optional)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh herbs such as cilantro or parsley, chopped

Instructions

  1. Heat a pan over medium heat and add olive oil.
  2. Add leftover goose and cook until warmed through and slightly crispy.
  3. Prepare vegetables by slicing lettuce, cucumber, tomatoes, and onion.
  4. In a bowl, mix mayonnaise or yogurt with mustard or hoisin if using.
  5. Warm flatbreads or tortillas until pliable.
  6. Spread sauce over each wrap.
  7. Add warm goose to the center of each wrap.
  8. Top with vegetables and fresh herbs.
  9. Season with salt and pepper.
  10. Fold or roll tightly and serve immediately.
