A rich and flavorful curry that transforms leftover roast beef into a warm, spiced dish with a savory, comforting sauce.

Ingredients

  • 2 cups leftover roast beef, sliced or cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder or curry paste
  • 2 cups tomatoes (fresh or canned)
  • 1 cup beef broth or water
  • 1/2 cup coconut milk or yogurt
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add chopped onion and cook until softened and lightly golden.
  3. Stir in garlic and ginger, cooking until fragrant.
  4. Add curry powder or paste and cook for another minute.
  5. Stir in tomatoes and cook until slightly reduced.
  6. Pour in beef broth and bring to a gentle simmer.
  7. Add leftover roast beef and simmer for 10–15 minutes until heated through.
  8. Stir in coconut milk or yogurt until combined.
  9. Season with salt and black pepper to taste.
  10. Garnish with fresh cilantro and serve hot.
