This Leftover Hot Dog Fried Rice is a quick, budget-friendly meal that transforms leftover hot dogs and day-old rice into a flavorful one-skillet dinner. Packed with vegetables, eggs, and savory seasonings, it’s perfect for busy lunches or weeknight meals.

Ingredients

  • 3 cups cooked day-old white rice
  • 4 leftover hot dogs, sliced
  • 2 large eggs
  • 2 tablespoons vegetable oil or sesame oil, divided
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup frozen peas
  • 1 cup carrots, diced
  • 3 green onions, sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper

Instructions

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  2. Add the sliced hot dogs and cook until lightly browned and slightly crispy. Remove and set aside.
  3. Add the eggs to the skillet, scramble until just cooked, then transfer to a plate.
  4. Add the remaining oil, then sauté the onion, garlic, carrots, and peas until the vegetables are tender.
  5. Add the cooked rice and stir well, breaking up any clumps.
  6. Return the hot dogs and scrambled eggs to the skillet.
  7. Stir in the soy sauce, oyster sauce if using, sesame oil, and black pepper.
  8. Cook for 2 to 3 more minutes, stirring frequently, until everything is evenly coated and heated through.
  9. Garnish with sliced green onions and serve immediately.
