This Kiwi Sorbet is bright, refreshing, and bursting with fresh kiwi flavor. Sweet-tart fruit and a hint of lime create a smooth, dairy-free frozen dessert that’s perfect for warm days or as a light finish to any meal.

Ingredients

  • 6 fresh ripe kiwis, peeled
  • 3/4 cup granulated sugar
  • 1/2 cup water
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest (optional)
  • 1 pinch salt

Instructions

  1. Combine the water and sugar in a small saucepan and heat until the sugar completely dissolves. Remove from the heat and let the syrup cool.
  2. Blend the peeled kiwis with the cooled syrup, lime juice, lime zest if using, and a pinch of salt until smooth.
  3. Strain the mixture through a fine-mesh sieve for an extra-smooth texture if desired.
  4. Refrigerate the mixture for at least 2 hours until thoroughly chilled.
  5. Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft sorbet consistency.
  6. Transfer the sorbet to a freezer-safe container and freeze for 2 to 4 hours until firm enough to scoop.
  7. If not using an ice cream maker, freeze the mixture in a shallow container, stirring every 30 to 45 minutes until smooth and fully frozen.
  8. Let the sorbet sit at room temperature for 5 to 10 minutes before scooping and serving.

Notes

  • Choose ripe kiwis that yield slightly to gentle pressure for the best flavor.
  • Straining the mixture is optional but creates a smoother sorbet.
  • Add fresh mint, strawberries, mango, or pineapple for delicious variations.
  • Store in an airtight freezer-safe container for up to 2 weeks with plastic wrap pressed against the surface to reduce ice crystals.
  • Allow the sorbet to soften slightly before serving for easier scooping.
