A hearty twist on the classic Reuben sandwich featuring smoky kielbasa, tangy sauerkraut, melted Swiss cheese, and creamy dressing on crispy toasted rye bread.

Ingredients

  • 12 oz kielbasa sausage, sliced lengthwise
  • 4 slices rye bread
  • 1 cup sauerkraut, drained
  • 4 slices Swiss cheese
  • 2 tablespoons butter
  • 1/4 cup thousand island dressing
  • 1 tablespoon Dijon mustard (optional)

Instructions

  1. Heat a skillet over medium heat and cook the kielbasa slices until browned and heated through. Remove and set aside.
  2. Butter one side of each slice of rye bread.
  3. Place one slice of bread buttered side down in the skillet.
  4. Layer Swiss cheese, cooked kielbasa, sauerkraut, and thousand island dressing on the bread. Add Dijon mustard if desired.
  5. Top with another slice of bread, buttered side facing up.
  6. Cook over medium heat, pressing gently, until the bread is golden and the cheese begins to melt.
  7. Flip carefully and cook the other side until golden brown and the cheese is fully melted.
  8. Remove from the skillet, let cool slightly, slice, and serve warm.

Notes

  • Drain sauerkraut well to prevent soggy bread.
  • Use marble rye or sourdough for variation.
  • Try turkey kielbasa for a lighter option.
  • Cook on medium heat to ensure even browning.
  • Best enjoyed fresh for optimal texture.
