Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups low-sugar marinara sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon Italian seasoning
  • Fresh basil or parsley, chopped, for garnish
  • Additional Parmesan cheese, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and cook for 3 to 4 minutes until softened.
  3. Stir in the garlic and cook for 30 seconds.
  4. Add the ground beef or sausage and cook until browned, breaking it apart as it cooks.
  5. Drain excess grease if necessary.
  6. Stir in the marinara sauce, Italian seasoning, salt, and black pepper.
  7. Simmer for 5 to 7 minutes until slightly thickened.
  8. In a medium bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, egg, and Italian seasoning.
  9. Microwave the cheese mixture for about 1 minute or until warm and slightly melted, stirring halfway through.
  10. Divide the meat sauce among serving bowls.
  11. Top each bowl with a generous spoonful of the cheese mixture.
  12. Stir gently if desired or leave layered for a lasagna-style presentation.
  13. Garnish with fresh basil and additional Parmesan cheese before serving.
