Crispy karaage-style chicken sliders featuring juicy marinated chicken, a crunchy coating, and fresh toppings on soft buns. A flavorful fusion dish perfect for parties or casual meals.

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons soy sauce
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon rice vinegar or lemon juice
  • 1/2 cup cornstarch or potato starch
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • oil for frying
  • 68 slider buns
  • 1 cup lettuce
  • 1/3 cup mayonnaise or spicy mayo
  • 1/2 cup pickles or cucumber slices

Instructions

  1. Cut chicken into small, slider-sized pieces.
  2. In a bowl, mix soy sauce, garlic, ginger, and rice vinegar or lemon juice. Add chicken and marinate for at least 30 minutes.
  3. In another bowl, combine cornstarch, flour, salt, and black pepper.
  4. Remove chicken from marinade and coat evenly in the flour mixture.
  5. Heat oil in a deep pan to 175°C (350°F).
  6. Fry chicken in batches for 5–7 minutes until golden and crispy. Drain on paper towels.
  7. Lightly toast slider buns if desired.
  8. Assemble sliders with lettuce, fried chicken, mayonnaise or spicy mayo, and pickles or cucumber slices.
  9. Top with bun and serve immediately.

  • Use potato starch for extra crispiness.
  • Add teriyaki or honey for a sweet-savory variation.
  • Try wasabi mayo for a spicy kick.
  • Reheat chicken in oven or air fryer to maintain crispiness.
