Ingredients

  • 4 cups kale, stems removed and chopped
  • 2 cups cooked quinoa, cooled
  • 1 cup fresh blueberries
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup sliced almonds or chopped pecans
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup dried cranberries (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the quinoa according to the package directions and allow it to cool completely.
  2. Place the chopped kale in a large bowl.
  3. Drizzle a small amount of olive oil over the kale and massage it with your hands for 2 to 3 minutes until tender.
  4. Add the cooled quinoa, blueberries, feta cheese, sliced almonds or pecans, red onion, and dried cranberries if using.
  5. In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, honey or maple syrup, garlic, salt, and black pepper until smooth.
  6. Pour the dressing over the salad and toss until everything is evenly coated.
  7. Let the salad rest for about 10 minutes so the flavors can meld.
  8. Serve chilled or at room temperature.
