Jasmine Grape Cake is a soft and elegant dessert infused with fragrant jasmine tea and studded with juicy grapes. This light and moist cake is perfect for tea parties, brunches, or any occasion that calls for a delicate homemade treat.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 jasmine tea bags
  • 1/2 cup milk
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup seedless grapes, halved
  • Powdered sugar for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch cake pan.
  2. Heat the milk until warm and steep the jasmine tea bags for 5 minutes. Remove the tea bags and let the milk cool slightly.
  3. In a bowl, whisk together the flour, baking powder, and salt.
  4. In a separate large bowl, beat the butter and sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract.
  7. Gradually add the dry ingredients alternating with the jasmine-infused milk until a smooth batter forms.
  8. Fold in half of the grapes gently.
  9. Pour the batter into the prepared cake pan and scatter the remaining grapes on top.
  10. Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool completely before dusting with powdered sugar and serving.

Notes

  • Add lemon zest for a bright citrus variation.
  • Drizzle warm honey over the cooled cake for extra sweetness.
  • Substitute grapes with blueberries or raspberries for a mixed berry version.
  • Lightly coat grapes in flour before folding into the batter to help prevent sinking.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
