These jalapeño garlic corn fritters are crispy on the outside, tender on the inside, and packed with sweet corn, fresh jalapeños, and garlic. Served with a smoky chipotle aioli, they’re a flavorful appetizer, snack, or side dish that’s always a crowd favorite.

Ingredients

  • Corn Fritters:
  • 3 cups sweet corn kernels
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1/3 cup milk
  • 2 garlic cloves, minced
  • 1 jalapeño, finely diced
  • 3 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying
  • Chipotle Aioli:
  • 1/2 cup mayonnaise
  • 1 chipotle pepper in adobo sauce, minced
  • 1 garlic clove, finely grated
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon fine sea salt
  • Optional Garnishes:
  • Chopped cilantro
  • Sliced jalapeños
  • Lime wedges
  • Crumbled cotija cheese

Instructions

  1. In a large bowl, whisk together the flour, cornmeal, baking powder, smoked paprika, sea salt, and black pepper.
  2. In a separate bowl, whisk together the eggs and milk.
  3. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Fold in the corn, garlic, jalapeño, green onions, and cilantro.
  5. In a small bowl, mix together the mayonnaise, chipotle pepper, garlic, lime juice, smoked paprika, and salt. Refrigerate until ready to serve.
  6. Heat about 1/2 inch of vegetable oil in a large skillet over medium heat.
  7. Drop spoonfuls of batter into the hot oil and gently flatten each fritter.
  8. Cook for 2 to 3 minutes per side until golden brown and crispy.
  9. Transfer the fritters to a paper towel-lined plate to drain excess oil.
  10. Serve warm with the chilled chipotle aioli and your favorite garnishes.

Notes

  • Fresh, frozen, or well-drained canned corn all work well in this recipe.
  • Remove the jalapeño seeds for a milder flavor.
  • Add shredded cheddar or pepper Jack cheese for extra richness.
  • Store leftover fritters in the refrigerator for up to 3 days and reheat in the oven or air fryer for the best texture.
  • The chipotle aioli can be refrigerated separately for up to 4 days.
