Drain and rinse the canned jackfruit. Use your hands or two forks to shred the jackfruit into small pieces, removing any seeds or tough pieces. Set aside.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Sauté for 4-5 minutes until softened.
- Stir in the minced garlic, smoked paprika, chili powder, ground cumin, salt, and pepper. Cook for another minute to allow the spices to become fragrant.
- Add the shredded jackfruit to the pan and stir to coat it with the spices and vegetables. Cook for 3-4 minutes, stirring occasionally.
- Stir in the crushed tomatoes, tomato paste, maple syrup, apple cider vinegar, and Worcestershire sauce. Mix well to combine.
- Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally. The sauce should thicken, and the jackfruit will absorb the flavors.
- Taste and adjust seasoning if needed. Spoon the jackfruit mixture onto your hamburger buns and serve immediately. Add optional toppings like pickles, coleslaw, or hot sauce for extra flavor.
