Ingredients

  • pie crust or puff pastry
  • fresh or frozen spinach
  • ricotta cheese
  • eggs
  • parmesan cheese
  • mozzarella (optional)
  • onion
  • garlic
  • olive oil
  • salt
  • black pepper
  • nutmeg (optional)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Cook fresh spinach until wilted or thaw frozen spinach, then drain well.
  3. Sauté chopped onion in olive oil until soft, then add garlic.
  4. In a bowl, mix spinach, ricotta, eggs, parmesan, and optional mozzarella.
  5. Add onion mixture and season with salt, pepper, and nutmeg.
  6. Line a pie pan with crust and pour in the filling.
  7. Optionally cover with a top crust and cut slits.
  8. Bake for 35–40 minutes until golden and set.
  9. Cool slightly before slicing and serving.
