Italian Baked Rice Casserole is a hearty and comforting dish layered with tender rice, savory meat sauce, and melted cheese. Packed with classic Italian flavors, this satisfying casserole is perfect for family dinners, meal prep, or cozy gatherings.

Ingredients

  • 4 cups cooked rice
  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups marinara sauce
  • 1 can diced tomatoes
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley or basil, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions

  1. Preheat the oven to 375°F.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the onion and cook until softened, about 4 minutes. Stir in the garlic and cook until fragrant.
  4. Add the ground beef or Italian sausage and cook until browned, breaking it apart as it cooks.
  5. Stir in the marinara sauce, diced tomatoes, Italian seasoning, salt, black pepper, and red pepper flakes.
  6. Simmer the sauce for about 10 minutes to blend the flavors.
  7. In a large bowl, combine the cooked rice with half of the mozzarella and parmesan cheese.
  8. Spread half of the rice mixture into a greased baking dish.
  9. Spoon half of the meat sauce over the rice layer.
  10. Repeat the layers with the remaining rice and sauce.
  11. Top with the remaining mozzarella and parmesan cheese.
  12. Bake uncovered for 25 to 30 minutes until hot and bubbly with melted golden cheese.
  13. Garnish with fresh parsley or basil before serving.
