Instant Pot Risotto is a creamy, comforting dish that delivers the rich flavor and velvety texture of traditional risotto with minimal effort. The pressure cooker makes it easy to achieve perfectly tender Arborio rice without constant stirring.

Ingredients

  • 2 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine (optional)
  • 4 cups vegetable or chicken broth
  • 0.5 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Freshly ground black pepper, for serving

Instructions

  1. Set the Instant Pot to the Sauté function and melt 2 tablespoons of butter with the olive oil.
  2. Cook the onion for 3 to 4 minutes until softened, then add the garlic and cook for 30 seconds.
  3. Stir in the Arborio rice and cook for 1 to 2 minutes until lightly toasted.
  4. Pour in the white wine, if using, and cook until most of the liquid has evaporated.
  5. Add the broth, salt, and black pepper, then stir to combine.
  6. Secure the lid, set the valve to Sealing, and cook on High Pressure for 6 minutes.
  7. Allow a natural pressure release for 10 minutes, then carefully release any remaining pressure.
  8. Stir in the remaining 2 tablespoons of butter, Parmesan cheese, and chopped parsley until creamy.
  9. Let the risotto rest for 2 to 3 minutes to thicken slightly if desired.
  10. Garnish with extra Parmesan and freshly ground black pepper before serving.

  • Add sautéed mushrooms for a classic mushroom risotto.
  • Stir in fresh spinach and peas after pressure cooking for added color and nutrition.
  • Mix in cooked shrimp or grilled chicken for a complete meal.
