Hunan Chicken is a flavorful and spicy Chinese stir-fry featuring tender chicken and a mix of vibrant vegetables, all coated in a savory and tangy sauce. A bold, quick, and healthy dish perfect for spice lovers, Hunan Chicken offers an irresistible combination of heat and richness in every bite.

 

Ingredients

1 lb boneless, skinless chicken breasts or thighs, thinly sliced

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 cup broccoli florets

1 medium onion, sliced

1/2 cup carrots, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon hoisin sauce

12 tablespoons chili paste or chili garlic sauce (adjust to taste)

1 tablespoon sugar

1/4 cup water or chicken broth

1 teaspoon cornstarch (optional, for thickening)

Green onions, chopped (for garnish)

Red chili peppers, sliced (optional, for extra heat)

Instructions

  1. Make the Sauce: In a small bowl, combine soy sauce, rice vinegar, hoisin sauce, chili paste, sugar, and water or chicken broth. Stir to combine and set aside.

  2. Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 5-7 minutes until browned and cooked through. Remove the chicken from the pan and set aside.

  3. Stir-Fry Vegetables: In the same skillet, add the garlic, ginger, and sliced vegetables (red bell pepper, broccoli, onion, and carrots). Stir-fry for about 3-4 minutes, or until the vegetables are tender-crisp.

  4. Combine Chicken and Sauce: Return the cooked chicken to the pan. Pour the sauce over the chicken and vegetables and stir to coat evenly. If you prefer a thicker sauce, mix the cornstarch with a small amount of water and add it to the skillet. Cook for an additional 2-3 minutes until the sauce thickens.

  5. Finish and Serve: Garnish with chopped green onions and sliced red chili peppers for extra spice. Serve hot with your choice of rice or noodles.
