Huevos Rancheros is a classic Mexican breakfast dish featuring sunny-side-up eggs served on crispy tortillas with a flavorful tomato-based salsa or ranchero sauce. This dish is full of bold, savory flavors and textures, making it the perfect way to start your day.

Ingredients

  1. 2 large eggs
    2 corn tortillas
    1 tablespoon olive oil (for frying the tortillas)
    1/2 cup salsa or ranchero sauce (store-bought or homemade)
    1/4 cup refried beans (optional)
    1/4 cup crumbled queso fresco or shredded cheddar cheese (optional)
    1 tablespoon fresh cilantro, chopped (for garnish)
    1 tablespoon sour cream (optional)
    Hot sauce (optional, for serving)

Instructions

Heat the olive oil in a skillet over medium-high heat. Fry the tortillas for 1-2 minutes per side until golden and crispy. Remove from the skillet and place on a paper towel to drain excess oil.

  1. In the same skillet, crack the eggs and cook them sunny-side up or to your preferred doneness. Season with salt and pepper, then remove from the skillet and set aside.
  2. In a small saucepan, warm the salsa or ranchero sauce over low heat for 2-3 minutes, stirring occasionally. Add chili flakes or hot sauce for extra spice, if desired.
  3. On each tortilla, spread a thin layer of refried beans (if using). Place one egg on top of each tortilla. Spoon the warm salsa or ranchero sauce over the eggs and tortilla.
  4. Garnish with crumbled queso fresco or shredded cheese, chopped cilantro, and sour cream, if desired. Serve with hot sauce on the side for extra heat.

  2. Serve with black beans, pinto beans, or refried beans for added protein and heartiness.
  3. For a vegetarian version, use vegetarian-friendly salsa or ranchero sauce.
  4. To spice things up, add diced jalapeños or a splash of hot sauce to the sauce.
  5. If you prefer flour tortillas, feel free to substitute them for the corn tortillas for a softer base.
