Béchamel Sauce is a classic French white sauce made from butter, flour, and milk, creating a smooth and creamy texture. This versatile sauce serves as the foundation for lasagna, casseroles, gratins, and many other comforting dishes.

Ingredients

  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk, warmed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of ground nutmeg (optional)

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Add the flour and whisk continuously until a smooth paste forms.
  3. Cook the mixture for 1 to 2 minutes to remove the raw flour taste.
  4. Slowly pour in the warmed milk while whisking constantly.
  5. Continue whisking until the mixture becomes smooth and free of lumps.
  6. Bring the sauce to a gentle simmer and cook for 5 to 7 minutes, stirring frequently.
  7. Add the salt, black pepper, and nutmeg if using.
  8. Continue cooking until the sauce thickens enough to coat the back of a spoon.
  9. Remove from the heat and use immediately or keep warm until needed.

Notes

  • Stir in grated cheese to create a rich cheese sauce.
  • Add garlic powder or roasted garlic for extra flavor.
  • Use fresh herbs such as thyme or parsley for added aroma.
  • If the sauce becomes too thick, whisk in a splash of milk.
  • Store in an airtight container in the refrigerator for up to 3 days.
